I generally work about 12-14 hours a day on the computer, and because of my background in nutrition, herbs, natural health and healing, I know how to eat healthy :) , but I just don’t have much time to prepare foods that take more time…

 So I have developed a way of preparing most of our meals very quickly with the least amount of time and effort, but also attempting to retain the most amount of nutrients.

Most of these recipes take about 15-20 minutes to prepare from start to finish. I also have some you can put into the oven and go back to work for an hour, then come back and dinner is ready;  simple, quick, easy, and mostly gluten free, usually vegetarian.

The key to being able to create a meal in 15 minutes is doing 30 minutes of prep once a week. 

Your prep work is very simple – when you return home from grocery shopping with your bags full of fresh vegetables and fruits -  YOU MUST WASH THEMbefore you put them into the fridge. 20140413_135906

Wash them and put them into veggie bags or containers that you can simply reach into and grab a handful.

The problem with most of us is that if the veggies are not washed and ready for eating.. you will open the fridge look at them and think I don’t have time to start washing veggies … and you will make something else that is fast…and probably not as healthy.

So even though you may lose a few nutrients in the veggies by washing.. or even cutting.. at least you will be eating them while they are fresher and more full of vitamins and minerals than deciding you don’t have time and leaving them in the fridge for yet another day or as many of us do… leaving them until we have to throw them into the compost.

Don’t waste time taking each bag of veggies out and putting them on the counter and taking out of the bag and chopping… then having to put everything back later.

You want to just line the bags up in the fridge crisper drawer open a bit at the top, so that you can simply grab a handful of what you need.  Or better yet, do what I do :) bring your knife and cut a piece of the veggie from the bag directly. Just make sure you save time leaving them in the fridge so you don’t waste time taking everything out, then putting it all back in !

After making a large cup of chai tea… add to your blender 4 roughly 3 inch chunks of fresh pumpkin, 5 pears, a handful of kale, bit of vanilla, cinnamon, honey, pinch of cayenne and coconut creamer.. warm and spicy

Sautéed asparagus and Brussels sprouts and pecans in coconut oil and sesame oil with a spinach and marinated peppers salad

easy raw hummus… just take a handful of garbanzo beans and soak them overnight or even for two days then toss them into the blender with some olive oil and 6 cloves of garlic and about 1/2 cup of water add some Celtic Sea salt to taste and maybe Cayenne if you want some spice in it and voila!

 Dandelion Salad – I LOVE springtime….so many beautiful tender edible wild plants. Tonights salad is made of spring greens, baby kale tops, dandelions, peppergrass, miners lettuce, yellow dock leaves, berry flowers and maple buds

15 minute meal... put some thai rice noodles in a pot and boil water in your kettle to pour over them while you chop up a couple peppers, carrots, onion, mushrooms, zucchini, add some gingerand lemongrass if you have it... add 1/4 can coconut milk and thai seasoning.. (try to find an organic one) sir fry quickly and pour over your soaked noodles.. this was really delish !!

10010623_10201319047353223_1481823590_o  10 minute Mushroom Miso Seaweed Coconut soup – oh my… this turned out amazing !! saute onions with mushrooms then add seaweed and stir while it mixes for another minute then add a teaspoon of miso and a 1/2 teaspoon celtic sea salt and add a can of coconut milk.. oh my… this wont last long..!!

simple apple user upper for the fall apples…tastes like pistaccio cookies….simply grind apples into chunks with a hand processor add honey and pecans, drop onto dehydrator sheet…. super yummy

I had some fresh coconut meat so I threw the coconut meat in with a small pack of strawberries and about 6 dates for extra sweetness and it didn’t look very creamy so I put in 1/2 avocado and then it wasn’t pink enough so I added a 1/8 of raw beet and it turned it a pretty pink. I used ground flaxseed mixed with chopped dates for the crust… its kind of runny so I put it in the freezer ( after Daniel ate a big bowl this does not fit into my 15 minutes meal plan so I wont be making it again unless just as a fast pudding

had to stop for lunch and I need to do something with 3 coconuts meats red lentils with onions grated carrots and celery… I threw the lentils in the pot with just a bit of water on high with shaving off onion bits holding the onion over …the pot to make it go faster and grated the carrots right into the pre boiling pot as well, then added celtic sea salt turmeric, and chili flakes then as it came to a boil threw the coconut in my vitamix and then plopped it into the soup… I turned it off and we ate so the veggies didn’t get to actually cook, just get hot and so there is your ten minute coconut curry lentil soup !!

Coconut rice with dinner last night. I purchased some raw real coconuts to make coconut kefir with and then decided to figure out what to do with the coconut meat so sautéed some grated coconut meat with garlic and celtic sea salt, chili pepper flakes and a dab of honey and add it to my already cooked leftover rice.. wowee that was so good :) )
